My father pays for most of my wedding, it will probably be a total of 10,000 +. Is it possible to write some of these costs as a gift for me?

Only donations to charities are deductible.
Of course not. And certainly there, if you or someone else a gift, you can not deduct the donation.
You do not need to "cancel" the gifts they give to others, so that your plan will not work. Nice try, though.
